Vegan “Tuna” Sandwich Recipe

Tuna is one of the items I missed the most once I switched to a plant based diet. My mom used to make this awesome fast recipe whenever we were hungry. Thankfully I have found a way to make a plant based version so I can make a quick “Tuna Sandwich” whenever I get a craving.

Ingredients

1 can of Chickpeas (drained)

1 stalk of celery chopped

1/4 of onion chopped

1 tsp of minced garlic

1 tsp of ketchup

1 tsp of mustard

1 tsp of vegan mayo

1 lemon or lime squeezed

place in a food processor for 3-4 pulses depending on desired texture

It is the perfect lunch or snack. You can also pair with crackers instead of bread. The serving size is usually 2-3 sandwiches. You can always make more by doubling up the ingredients and saving it for later to meal prep for the week. Chickpeas are a great source of vegan protein.
